Seafood Salad with Avocado & Tomato

Servings: 2-4


  • 2 tomatoes, chopped
  • ½ pound medium shrimp
  • 3 tbsp olive oil
  • 1 avocado, chopped
  • 1 tbsp cilantro, chopped
  • 1 lime, zested and juiced
  • Salt and black pepper to taste


  1. Heat a skillet over medium heat, add in 1 tbsp olive oil and cook the shrimp until opaque, about 8-10 minutes. Place the shrimp, tomatoes, and avocado in a large bowl.
  2. Whisk together the remaining olive oil, lime zest, juice, salt and black pepper, in another bowl. Pour the dressing over, toss to combine and serve topped with cilantro.
