Preparation Time: 30 minutes
- 2 tomatoes, chopped
- ½ pound medium shrimp
- 3 tbsp olive oil
- 1 avocado, chopped
- 1 tbsp cilantro, chopped
- 1 lime, zested and juiced
- Salt and black pepper to taste
- Heat a skillet over medium heat, add in 1 tbsp olive oil and cook the shrimp until opaque, about 8-10 minutes. Place the shrimp, tomatoes, and avocado in a large bowl.
- Whisk together the remaining olive oil, lime zest, juice, salt and black pepper, in another bowl. Pour the dressing over, toss to combine and serve topped with cilantro.
