Salad of Prawns and Mixed Lettuce Greens

  • 2 cups mixed lettuce greens
  • ¼ cup aioli
  • 1 tbsp olive oil
  • ½ pound tiger deveined, prawns and peeled
  • ½ tsp Dijon mustard
  • Salt and chili pepper to season
  • 1 tbsp lemon juice


  1. Season the prawns with salt and chili pepper. Fry in warm olive oil over medium heat for 3 minutes on each side until prawns are pink. Set aside. Add the aioli, lemon juice and mustard in a small bowl. Mix until smooth and creamy.
  2. Place the mixed lettuce greens in a bowl and pour half of the dressing on the salad. Toss with 2 spoons until mixed, and add the remaining dressing. Divide salad onto plates and serve with prawns.
