Preparation Time: 15 minutes
- 2 cups mixed lettuce greens
- ¼ cup aioli
- 1 tbsp olive oil
- ½ pound tiger prawns
- ½ tsp Dijon mustard
- Salt and chili pepper to season
- 1 tbsp lemon juice
- Season the prawns with salt and chili pepper. Fry in warm olive oil over medium heat for 3 minutes on each side until prawns are pink. Set aside. Add the aioli, lemon juice and mustard in a small bowl. Mix until smooth and creamy.
- Place the mixed lettuce greens in a bowl and pour half of the dressing on the salad. Toss with 2 spoons until mixed, and add the remaining dressing. Divide salad onto plates and serve with prawns.
