Modern Greek Salad with Avocado

  • 2 tomatoes, sliced
  • 1 avocado, sliced
  • 6 kalamata olives
  • ¼ lb feta cheese, sliced
  • 1 red bell pepper, roasted and sliced
  • 1 tbsp vinegar
  • 1 tbsp olive oil
  • 1 tbsp parsley, chopped


  1. Put the tomato slices on a serving platter and place the avocado slices in the middle. Arrange the olives and bell pepper slices around the avocado slices and drop pieces of feta on the platter.
  2. Drizzle with olive oil and vinegar and sprinkle with parsley to serve.
