- 2 tomatoes, sliced
- 1 avocado, sliced
- 6 kalamata olives
- ¼ lb feta cheese, sliced
- 1 red bell pepper, roasted and sliced
- 1 tbsp vinegar
- 1 tbsp olive oil
- 1 tbsp parsley, chopped
- Put the tomato slices on a serving platter and place the avocado slices in the middle. Arrange the olives and bell pepper slices around the avocado slices and drop pieces of feta on the platter.
- Drizzle with olive oil and vinegar and sprinkle with parsley to serve.
